What’s Cookin’?: Baked Mac & Cheese

Per my contracted agreement. I must give out last years dairy bowl recipe. This to be clear, is NOT what I am cooking this year, but rather what I cooked two years ago. Missed last year because of a…..well we all know. Anyways, this Mac and Cheese is just a simple wholesome stick to your ribs baked mac and cheese that can be set in the top of your grill at tailgate and is so good. This will yield about 28 cup portions or 7 quarts, so might need to split or shrink depending on group size. I get the casserole dishes ready two days early and just bring to tailgate and  toss in the grill that morning.

Pasta 10 minutes: 

-2 lbs Uncooked Shell Psata

You are going to cook that pasta in boiling water, until Al Dente. Strain and shock it with ice water bath. Drain and toss lightly in a drizzle of oil. Set aside. (What I like to do is get water to a boil, cook pasta for 3 minutes at boil heat, and then kill the heat to slowly finish cooking to done)

Cheese Sauce 20 minutes of Prep:
-6 oz butter 1 tbs Dry Mustard
-10 tbs flour ¾ tsp cayenne pepper
-3 tsp garlic powder

Melt butter in sauté pan over med heat, add flour, dry mustard, cayenne, and garlic powder, cook until mixture starts to bubble.

Slowly add while whisking:
-1 Qt Hot Chicken Stock
-3 C Heated Milk
-3 C Heated Heavy Cream

Continue to cook and whisk for about 5 min. until mixture starts to thicken.

Add and melt the following cheeses: Remember ½ lbs of shredded cheese yields about 2 cups.
-1.5 Cup Shredded Parmesan Cheese 1.5 Cups Shredded Swiss Cheese
-3 Cups Shredded Cheddar 3 Cups Shredded Pepper Jack Cheese

Mix the cheese sauce when slightly cooled with the noodles. Then get it into your baking dish or dishes and cover with topping.


Bread Crumb Topping:
-2 C Bread Crumbs
-4 Tbs Melted Butter
-1 C Chopped Walnuts
-½ C Chopped Fresh Parsley
-1/3 C Dried Onion Flake
-½ tsp Tabasco Sauce

Then what I suggest is turning on the grill and warm it up. Use the upper rack if available or turn on half the grill to 350 and bake in the grill for 30 minutes. Keep in mind that you don’t want to set this directly above the flame, you need space. This does not work on all grills. Maybe you bake it the morning before you come over. Should you have a smoker, cooking lower and slower is fine, but time and temp will very. You will need at least 10 minutes at above 310 to get the topping browned.
