What’s Cookin’?: Jalapeño Bacon Jam Burger

What is more SD State than the Beef Bowl? Now, I was supposed to do the recipe that I did up last year for this game,
but instead of giving away my secrets for prime rib. I will die before that happens. I thought lets get something more
interesting for people. I am recommending a 80% to 20% local locker beef burger with the following toppings and
seasonings.


Jalapeno Bacon Jam
1 lb. bacon, cut into 1″ pieces
8 oz red onion, fine dice
4 oz jalapeno, seeded and fined diced
2 cloves garlic, minced
1/2 c. brown sugar
1/4 c. maple syrup
1/3 c. apple cider vinegar
1 tsp. chili powder


DIRECTIONS
1) In a medium saucepan over medium heat, cook bacon until crispy. Transfer bacon to a paper towel-lined plate,
reserving about a tablespoon of bacon fat in the pan.
2) Reduce heat to med-low. Add onion to the pan and cook, stirring often, until the onions are caramelized, about 10
minutes. Then add the jalapeño and cook for 5 more minutes.
3) Stir in garlic, brown sugar, maple syrup, vinegar, chili powder and cooked bacon. Bring mixture to a simmer then
reduce heat to low. Cook until the liquid has reduced and thickened, and the onions are ”jammy”, 7 to 10 minutes.
4) Let cool before transferring to a jar. I couldn’t tell you how long it keeps, because it never makes it past a week. We
put it on crackers, chips, and in this case burgers.

Now for the burger:
2lbs 80/20 ground beef from your favorite locker
Grinder of Salt
Grinder of Pepper

Directions
1) Patty your burgers into quarter pound size
2) 10 inches away from the burger using a spice grinder grind the salt and pepper over each burger. You can also
sprinkle pre ground pepper and kosher salt if you don’t have the ability to fresh grind.
3) You want to preheat your grill to the desired temp. I love cooking my burgers on high (500 Degrees) for 2
minutes rotating, flipping, and rotating each for 2 minutes. You cook the burger to your preferred doneness.
4) When your burger is 1 minute out, add a tablespoon of the jam above, cover with a piece of swiss cheese and
toast your bun. Then sit back, and enjoy us doing a little two step on Dixie.
